By Malcolm Evans No area of human addictions is so badly served or exploited as that relating to food, eating and dieting. The very same substances that form the food and eating addictions are being repackaged and represented as the possible cure a proposition utterly ridiculous as soon as one steps back and sees the context. It would be like producing a range of slightly blunter blades for the self-harming, or slightly reduced moonshine for alcoholics, or boxing gloves for the domestically violent. Yet a similar kind of lunacy continues within the food arena, with every conceivable variety of lo-calorie, lo-fat, lo-carbohydrate or lo-sugar being promoted as the cure to all one’s underlying eating, weight and self-image issues. - Is food your problem? Then, hey, come right over here because we have more food that just happens to be your personal solution! But legislation is rarely the right answer to these things. Calls for tightening regulations governing what the Food Industry can produce and what it can promote are little better than dead end by-ways on the road forwards to lasting solutions. Education is what is needed. However, this so often ends up in the backwater of nutrition, not the mainstream requirement for a better mass understanding of the psychology of eating. It starts at the highest levels, not just with business, which will naturally and not improperly seek advantage wherever it can be obtained. The Government of both the US and the UK are currently in the process of releasing new eating guidelines. They have been putting out similar advice at regular intervals for over 100 years now. No-one pays a blind bit of notice. People by and large understand the fundamentals of adequate eating. The deficit is in workable strategies for individuals to be able to adopt these fundamentals permanently and painlessly into their everyday routines. Instead we end up with a ceaseless tide of next to useless diet and nutrition advice. A lot of it revolves around scientific studies into the possible effects or non-effects of various micro-nutrients, often presented in a context utterly removed from the daily reality of eating. There is a growing Academic Industry which needs to fuel itself with research and that often becomes research for research’s sake. In relation to all things food and eating, the sector needs to look closely into itself and to assess whether it is acting in the interests of solutions, or risking an increase in food obsession through its often self-serving output of irrelevant nutritional verbiage. It is even easier to take pot shots at the Dieting Industry but as it is still standing and, indeed, thriving, there is no harm at all in taking a fresh swipe! Everything about it is simply wrong. There have been experiments where kids have been left to select their own intake from a range of offered foods everything from trash candy to fresh fruit, with all other major foods and dishes in- between being represented. And you know what? Within a couple of days the kids stop binging on rubbish and self-select a balanced diet. But perhaps that isn’t that surprising really after all. The problem is that we are in danger of losing sight that food and eating is actually quite easy and instinctive. Can you imagine if there was a rising international epidemic of dysfunctional breathing? There would be fears that humankind was collectively taking leave of its senses. Well, without entering the realms of science fiction, this is the self-induced and self-perpetuated variety of madness with which we flirt through our food obsessions. There is a growing movement called Intuitive Eating which is attempting to recapture the innocence and simplicity of eating. Of itself this is a very good thing but it is does not go far enough. Hand-in-hand with an anti-dieting message needs to be a proactive and personal sense of awareness about the social structures which support the Dieting Madness. Once you understand your own personal combination of emotional, cultural and commercial pressure points, it becomes very easy to grasp that food is nothing more than fuel with a little sociability and celebration thrown in for good measure once in a while. Next time you are tempted by any diet product (which can be as superficially OK as a lowered calorie something or other), forcibly remind yourself that it is all nonsense. It is the total consumed which matters, not the sum of the parts. And, much more importantly, beyond this initial breakthrough acknowledgment, learn to accept that nothing we put in our mouths (certainly nothing that emanates in any shape or form from the Dieting Industry) actually has much to do with it at all. The gainful alternative is to learn to put good things into our minds instead and when we do this we are talking a whole new ballgame and it is one we can win on our own terms time after time. 5 Things To Know When Making Clock Frets

By Barry Share Some of the techniques when cutting out fret patterns have always been the same techniques and methods used over the years when working with longcase clocks. I find them easy and most importantly faster when trying to make a living repairing or building new longcase clocks. Having cut out hundreds of fret patterns when working on new and antique longcase clocks, I find the hardest part of making a fret is getting the perfect fret shape to fit the hood. 1. USE GREASEPROOF PAPER AND A WAX CRAYON FOR MARKING OUT THE OUTER SHAPE. If you are working on an antique longcase clock and the fret is missing from the hood, the best way is the traditional way by using greaseproof paper and a wax crayon or soft leaded pencil. You can lay the greaseproof paper over the area where the old fret is missing and you can then rub the wax crayon over the fret shape, giving you the outer edge shape of the fret on the paper. 2. USE AN OLD CEREAL BOX FOR THE CARD TEMPLET. This is just a rough pattern at this point. Now transfer the shape of the fret onto a thin piece of card, you can use an old cereal box or the like, then cut out the shape of the fret. Once the card is cut to the correct fret shape it is very important to make sure the card cut out fits tight in the fret hole or space of the old fret you are replacing. When you have your card template fitting correctly you now need to make two more templates exactly the same shape and size as your original, these are used to sandwich the veneer you are making the new fret from, and this will give it strength when cutting the fret out and stop any breakout of the veneers. 3 GLUE THREE SHEETS OF VENEER TOGETHER FOR THE FRET THICKNESS. The actual fret is made from sheets of veneer, normally you can glue together three sheets of veneer using PVA glue and a small veneer press, or two boards and a heavy weight on top. When the sheets of veneer are dry transfer the shape of the card template onto the veneer ply and cut out. This is done with a scalpel or sharp chisel and make sure the veneer frets fit like you did with the card cut out, some times a file is needed to make a really good fit. When this has been done you need to glue the fret pattern to one of the card templates, depending on what pattern you have chosen, some times you may have to juggle the pattern around to fit in side the fret shape. Now you can sandwich the veneer you are making the new fret from between the template with the fret pattern on at the top, and a blank card template at the bottom by taping the edges together with masking tape. ==================..Template with Pattern. = = = = = = = = = = = =….Three Ply Veneer. ==================…Blank Card Template. 4. USE A SMALL BLADE AND HAVE THE FRET SAW ON LOW SPEED TO KEEP IN CONTROL. When your fret is taped up and ready for cutting out you need to drill holes in the parts of the fret that has to be cut out and removed. These holes are for the fret saw blade to fit through, when cutting the fret out use your finest blade and have the fret saw on the slowest speed, this will give you more control with the fret saw and the level of work will be much higher. When all the fret is cut out remove the card from around the veneered fret, give the fret a touch up with a fine needle file and sand to finish. 5. DON’T TAKE FOR GRANTED BOTH FRET SHAPES ARE THE SAME. If you are restoring an antique longcase clock and both sets of frets are missing from the hood, for example a swan neck hooded clock, you will probably have to make both the fret shapes separately as most antique clocks may have already been restored or altered over the years or with the passage of time they may suffer from twisting or shrinkage and most probably be different, so don’t take it for granted they are both the same. When building new longcase clocks you know that both frets will be mirrored so you can cut both frets at the same time. By Joy Cagil This Christmas, I’m going to make trifle for desert. After all, what is Christmas without trifle? I’m sure, even the pickiest of diners who shun cross-cultural eating would find a soft culinary spot for trifle in their hearts and palates if they could hear Charles Dickens vouch for it. I first tasted trifle, a couple of decades ago, not in England where it has originated but in Long Island, NY, in a restaurant called Steak Pub of Fort Salonga, where every Friday evening, we used to go for dinner, especially for trifle and the free house wine. Our friends and neighbors who dined there for the same reason would drop by our table to discuss the kind of trifle the chef was surprising us with that the evening. To us, trifle and food was all about sharing, same as the neighborly gossip. In that restaurant, desert was picked by the customer from the desert bar, giving him or her an educational access to the desert chef. Trifle, as a word, is the offspring of the French word trufle, meaning something trite or whimsical. As a desert, trifle put down its roots inside the 1700s cooking arts when biscuits, liquor, and custard were combined. In the United States, this new delicacy found great popularity with the plantation owners in the south. Through the last three centuries, trifle has soaked its way into literature through the writers’ tongues, after Oliver Wendell Holmes called it, “That most wonderful object of domestic art,” Dickens put it among his ‘glorious food’s, and J. K. Rowling mentioned it in Harry Potter and the Philosopher’s Stone. Trifle not only delights the palate but also enchants the senses, especially the eyes, for it is an artistic desert arranged in layers, placed in trifle bowl for effect, and refrigerated for several hours before serving. A trifle bowl is a very large, see-through glass bowl from which every delicious layer of trifle beckons its admirers. Trifle’s layers are: a sponge cake or even ladies fingers soaked in brandy, whisky, or sherry; jelly or jam; custard; fresh fruit or berries in season; and huge mounds of whipped cream topped with cherries, sprinkles, or nuts. Although whatever composes the trifle can be made from a mix or sometimes leftover cakes and puddings can be used, a true-to -form trifle gourmet would like his trifle to be made from scratch. After the trifle’s layers are arranged, refrigeration for several hours is essential for the flavors to penetrate into each layer. There are quite a few kinds of trifle: chocolate trifle, coronation trifle, quick trifle, Black Forest trifle, and the good old-fashioned trifle English mums make as an alternate Christmas desert to the plum pudding. My trifle shall not take the celebrity route, neither, tastewise, will it come close to Emeril’s deserts or Creole Christmas Trifle, but it will make an impact on Santa when he comes down our chimney. Experimenting, in my efforts to discover the reason why, I found that this pressure during the alternate contraction and relaxations of the muscles, produced a determination of the blood to that point and therefore a distention of the vessels. Consequently, an enlargement of the structure occurs, just as a sponge will enlarge when its cells are filled with water. Acting upon this idea I substituted the pressure of the palms of the hands for Sampson’s bands, and found that in this way the results were the same. Exercise for Sagging Face Muscles The muscles of the cheeks could be speedily enlarged by the following simple exercise, which I practice while lying on my back: Draw up both corners of the mouth towards the eyes, or in the position of an exaggerated smile. This will bunch up those supporting muscles on the upper part of the cheekbones immediately below the corners of the eyes. Now drop the chin to its utmost extent. This will place a further tension upon the cheek supporting muscles. In this position, that is, keeping them bunched up, alternately open and close the jaws, at the same time steadily massage, or rub with the palms of the hands. This will infallibly enlarge them. The logical reason behind this statement is that the overlying skin and the well-supported tissue will give the cheeks the rounded appearance of earlier years. How to Get Rid of a Double Chin: The Double Chin Exercise The muscles of the chin may be classed as involuntary and can only be developed by massage. But they usually respond more quickly to that process than the muscles that surround the eye. Rest the chin upon the palms of your hands, press firmly and rub the underlying muscles vigorously. This is the same method for the muscles surrounding the eye, but requiring more pressure. The position of the hands should be continually shifted. If continuous pressure is maintained upon any part without relaxation, development will be slow. Change positions, as I have suggested. If your chin was ever full and round in your younger years, that condition will be regained by persistent practice. There will also be an increase in color of the cheeks and a generally improved and more youthful appearance. When I was 50, my cheeks and chin were sunken but now, at 72, they are full and rounded. This is the result of the persistent practice of the exercise I have described. It is proven not to cause lines on the face and will develop the supporting muscles of your cheeks. How To Build A Waterfall

By Dan Eskelson The number one, most asked question that I receive about water features is “How do I build a waterfall?” The first advice I give is to visit natural waterfalls or at least look at photos. Don’t try to memorize just how they look…just get a general idea how the water flows around and over the rocks. The design of your falls will depend on topography, pump and pipe size, length of water flow from pump to falls, pond size and possibly other site-specific factors. If your pond is just 4′ x 6′, you certainly don’t want a large, three foot wide falls - keep the elements of your water feature in scale. One of the most common mistakes results from the desire for a tall waterfall at a level building site…large amounts of soil are imported to build the falls up to a three or four foot height. Yes, you will achieve a dramatic waterfall, but the total effect will look more like an out of place volcano. A falls of just two feet will produce a very satisfactory effect both visually and audibly. On a level site, with an “average” size pond of 11′ x 16′, the amount of soil needed to surround the biological filter and create the berm is just about equal to the amount of soil excavated from the pond…it works out quite well. To further enhance or enlarge the berm, you may want to import a little more soil, large boulders or other features. If you are working on a slope, you have the option of placing the biological filter (waterfall source) uphill from the pond and creating a series of cascading waterfalls. This is how I built my falls, described in the photo essay here: http://clearwaterlandscapes.com/pondphotos.htm It was definitely an exercise in visualization to determine exactly how the water would flow down the falls. I made a slight underestimation of the total flow and could have widened the falls somewhat, but the effect is very acceptable. Even on a level site, it’s a good design strategy to place the falls six to eight feet from the pond. This will create a short stream to the pond. Be sure to use a wide EPDM rubber liner under the falls and/or stream…this will allow for twists and turns in the course of the water and also contain splashing. A ten foot wide stream liner is recommended. Underlayment under the falls and stream liners is usually not required. When your excavation is complete for the falls, and liner is in place, add your stone. Don’t be in a hurry - try several (or many) combinations and visualize how the water will flow. When satisfied with your arrangement, use black waterfall foam to direct the water over the stone instead of under it. That is, stone that is directly in contact with the liner should sit on a bed of foam so the water goes around or over the stone instead of underneath it. Caution - the foam expands greatly…don’t use too much! Though it requires some creativity and patience, building a waterfall is extremely satisfying. Though you should give some time to preliminary research, you’ll learn most by actually building your water feature - just do it!
